I'm developer for a VR chair/simulator and i would like to know how could i get data from the airplane(velocity, rotation etc...)
and using them in a c# program that run in background? if it is possible of course.

Use SimTools. I've built a G-Seat and use SImTools to extract all that stuff and use it to drive servos for heave/surge/roll.
SimTools use the SDK to get the raw physics, so if you knew how to connect with that SDK you could bypass SimTools, but that's beyond me.
Also have a look at our SDK tools. They include a sample Visual Studio C++ project that shows you how to get all simulation data:
