When taxiing, the brakes are unresponsive until I go past 10% braking power and the brakes apply abruptly. Also, the tires appear to "slip" when turning

As for the not noticeable effect at 10% braking power it could be that the idle engines compensate for the braking force. But for slipping in corners this probably has to do with the speed you enter the corner try to remain around the 15 knots and slow down even more in 90* corners or more. And for a lot of aircraft you will notice that steering with the rudder control at maximum capacity will turn the front wheel to such a degree that the front wheel isn’t steering correctly anymore but being “shoved”

The braking effect is there on all aircraft as far as I know

What about the unwanted zooming if you try brakes and steering together? The zooming is a constant pain, it could be made conditional, only working with some special or two hand gesture, not a constant destructive distraction☹️.
