Depends how quickly you want to turn and how fast you already are. If you're too slow the best turn rate is achieved when you bank more than 90 degrees to pick up some speed as you turn with the nose below the horizon.
I'm not sure how much fly by wire the FS1 version had, in FS2 and the upcoming FS4 you need zero rudder input, the turn coordination takes care of this.
