2. What does this Warning change?
I didn't notice any change in either Setting.

The knobs on the engine EPR gauges adjust the planned takeoff engine pressure ratio and is visual but other than that it doesn't have an affect.
The warning assistance automatically pushes the master caution and master warning after a few seconds. So for example if you disconnect the autopilot incorrectly it doesn't make a continuous warning sound like in the real aircraft so it's much less annoying, warnings are shorter and it's more user friendly.

Oh thanks, I always wondered why somebody clicked the master caution for example. I will change it real quick
They should not be there, the -300, -400 and -500 'Classics' have CFM56 engines and rely on N1 and N2 values for engine control, they do not have EPR gauges.
It was stated a while back that the Aerofly -500 is based on a 737-200 program which has a similar fuselage length and similar wings to the Classics. This -500 sim analog cockpit was based on a late -200 and the redundant EPR gauges were moved down a place instead of being deleted. There should be a blank space on the top row.
