That is only an approximation, the first sound would be from slightly before the plane was passing you so the angle is a bit less, only 60 degrees.
When the noise from the Mach 2 plane is heard the plane has already flown twice the distance from the source of that sound.

I don't speak French and I don't like facebook but here is a video of Concorde in a wind tunnel showing the shockwaves forming. You would only hear sound within the cone behind the airplane. The sonic boom happens as your microphone passes through that shockwave
