The altitude selector in the autopilot panel only allows 60,000 as a maximum. I take it you’re handflying the last 5000 feet?

No, I keep it in autopilot, you just need to indicate it that you want to climb more, and okce you're done you keep it in altitude hold.
You can do this with ANY airplane, not only this one. As long as you manage to keep it flying. It's tricky to find the real limit and as I said the AoA will be messy if you go too much into the edge. It will also depend on the air direction and speed.
I like challenges. If you want to test Concorde further try to make it take off with 2 engines, and then 1 engine, or 1 + partial 2nd... From different places.
That one entertained me for some time and it is extremely difficult.
