EDRK, EDFW, EDMT
LSZP, LSZG, LSZF, LSZK, LSZX, LSZB.
They may not all be famous glider airports, but they are also nicely detailed on iOS.

I can't say what the best glider airfields are.
However, I am currently working on adding aircraft towing and winch launching to all the airfields I have created, if they are available there.

How do you take off there, with an aircraft tow and/or winch launch?

Maybe I'll be able to recreate a start with an auto.
I found this manual for EGFE on the internet:
On page 4-3 it says:
Regardless of this,
- aircraft towing on RW03, RW09, RW21 and RW27 and
- winch launch on RW03 and RW21
work in FS4.
