Hello, would it be easy to implement the cargo versions of the A321 and A320? I assume all that would need to be changed would be the cargo doors, windows, and liveries. Please correct me if I am wrong. It would be cool to see these cargo versions.

I don't remember them having a freight version in the real world. But I think adding cargo versions for 747/777 aircraft is It seems feasible.

Without dynamic weight it doesn’t seem worth doing.

I think some shortened variants of the aircraft are better worth having than the cargo version.

Cargo aircraft also have several differences in their aircraft systems like air conditioning, cargo fire suppression, passenger signs, flight deck door, etc. and may require modeling of entirely new overhead panels. Just adding cargo doors is not enough either, you would have to remove the passenger doors and also create a somewhat decent looking cargo deck in case the doors get opened. All in all there is a significant amount of changes required, not impossible, but it's not as easy as slapping a new texture onto the fuselage.
