I wish to reset the flight activity log data. Even if I delete the logged flights, the activity data remains.

All your data is stored locally on your hard drive. If you have the windows version then it's in your documents folder in the Aerofly FS 4 folder in the "flightlog" directory. Delete the entire folder to reset the logs. Similarly you can reset all achievements by deleting the achievements folder.
On mobile you can just reinstall the app. But in the desktop versions including Windows, Mac OS and Linux the user data is not necessarily deleted when you uninstall because Steam does not have access to that folder.
