What do you mean by climbing too fast?
The aircraft uses the maximum climb thrust, not full takeoff thrust to climb and the vertical speed is just what is physically realistic based on the mass of the airplane.
Well this doesn't look too unrealistic but it's quite steep, yes... Keep in mind that the aircraft is below maximum landing weight and not close to the maximum takeoff weight that you would see in the real world.
Yes, you can change the engine rating in the CDU in the cockpit on the N1 Limit page, just like you would in the real world.

As Jet-Packs says ... on Boeings you can reduce the thrust limit. On Airbus you can set a higher flex temperature. I usually set the flex temperature between 80° and 90°, depending on the terrain. On Boeings you can set a To-1 or To-2 limit to reduce thrust.
