The new Apple M chips are all great. Of course the faster the smoother the simulation. The step from M4 Pro to M4 Max is also quite big, you will notice even smoother framerates as the GPU is almost 50% more powerful at least.
However the M4 Pro will also run Aerofly FS nicely.
If money is no issue, get the M4 Max.

Hi there,
I run aerofly on a M1 iMac with great success. So even a M1 processor is sufficient.

Bonjour à tous,
J'utilise aerofly sur un iMac M1 avec beaucoup de succès. Donc même un processeur M1 est suffisant.

Even the standard M4 is more than fast enough for Aerofly. I run it all at ultra on my Mac mini. Only in LA and Londen the frames drop to about 25-30. Everywhere else 60 fps+.
I would go for the pro if you want something futureproof, the max is probably an overkill just for Aerofly. But of course a powerhouse for many other games and apps that do require its power!
