While flying the A321, is it possible to skip to a desired waypoint via the MCDU? For example, if ASPAX is the next waypoint, but I want to fly directly to the one after it — is that possible? If so, how can I do it?

If you manually added the waypoint to the route you can press the CLR key and then remove the waypoint on MCDU flight plan page. After clearing the wpt you then also need to clear the discontinuity the same way.

Can't we just do a direct 'next' to the next, previous, or any desired Waypoint?

They are planning to add that. I don’t remember anymore what the issue was for not implementing it in the first place.
