This probably has been noted a billion times but I’ve been having an issue with aircraft weights. Usually when I do a long haul flight, I’ll set the weight to the rough number it will be during takeoff, (close to MTOW). Anyways this doesn’t seem to be a problem for the takeoff roll, but when I get close to cruising altitude (30k+), the aircraft struggles with climbing and stays near stall speed. Naturally, I go and manually lower the weight (getting rid of some fuel), but the aircraft still struggles. This 747 flight has been staying at roughly 29000ft and 210kts airspeed even with light weight setting and toga power.![]()

Like in the real world aircraft cannot reach high cruise altitude until a lot of the fuel has left the tanks.
Make sure to climb with FLCH or VNAV at high enough speed and if you are flying at almost full weight you may have to stop climbing at FL300 similar to how a real airline does it.

I physically lowered the weight of the airplane and it still couldn’t climb

Try climbing at Mach 0.82 or higher. If you get too slow you don't have enough thrust to power out of it at that altitude.
