Im running Aerofly 2023 on my iPad. Im a little unclear on the App Store if there is a newer version or if I am just seeing the version I am using already?

Aerofly FS Global marked the end of releasing an all new product every year. Since then you no longer have to purchase the latest version of the same aircraft each year. Scenery is now available globally and is streamed instead of downloaded.

Do I delete my version 2023 or just download this latest version and it will update the old one? Im running iOS on an iPad

No, you don't have to delete older versions!
The various IPACS apps can be operated side by side on the iPad, as long as they work with the operating system. Whether this makes sense, of course, everyone has to judge for themselves.

They are independent apps, you can keep the old one if you want to.
