Very confused if the Switch Version is kind of like a static “completed game” or if it recieves any updates. Ive seen blog posts about content additions but have never had an application update happen before. Game is up to date currently.
Is the Switch version sold as a “finished game” that does not receive content updates?

Updating the current Switch 1 version is always a littel difficult as performance is right on the edge. So we decide from time to time if an update is doable. In that sense, yes, it's more like a completed game but future updates 'might' be possible.

We do still get all updates to global scenery stuff like airports and POIs right?

Damn I was really excited to try the A321XLR. If you guys finish adding things like weight and balance, fuel consumption, ATC, etc. I would buy it on PC. Maybe then I’ll get to fly it.

Does this mean if i want to play the updates I could just get a Switch 2 and you guys update the game on that console? Or is that one also stunted due to performance.

We have no Switch 2 yet, so we can't give an answer.
