what does this option in VR menu means? Do we have touch support yet? Not that it would be as important for my VFR flights, I'm just curious about the technology though.

There is only preliminary motion controller (Vive and Touch) support currently implemented in Aerofly at the moment. This is limited to just basically a laser pointer.
Full motion control "VR Hands" support will be coming in a future update.
If you turn that off you won't see the Vive controllers that are sitting on your desk lol. It helps with immersion.

I've read about the preliminary support earlier however it never seemed to work on my pc. Not even the laser pointer.
Is that suppose to work in current version?
