I've never used TrackIR, but i have used FaceTrackNOIR, and of course I use VR now.
There should be a way to keybind a "recenter position" key for it, where you can literally move your position, then hit that key to recenter.

I am not 100% sure on that too, since i have not tried the flying school... but I came across a command keybind C for copilot?
Could it be that? Also changing your internal view should cycle you through different positions, including pilot seat and copilot seat.
How can I exit flying school mode ? Every time I try to fly I find myself in the copilot seat with a girl in the left !
Ehm what? If you sit in the copilot seat that doesn't mean she is flying. Does also not mean you are in flight school mode.
Just press the key assignment to change the camera ( "1" or "2" ).
Flight school mode is when you hear a voice explaining things and giving you tasks and text pops up on the screen and things like that.
To exit out of that just press ESC or click the back arrow in the top left corner of the flight info bar.
From the main menu just change the aircraft or location.
