I by now flying the A320 with Thrusmaster Airbus Captain Edition on my fancy MacBook Pro M1 Pro.
But a joystick does not fit for a Boeing. Because each time you will release it, it puts the yoke to neutral. But you can maintain it in position, but good luck to be steady.

For me it fails, even with auto trim on. The plane follows the yoke controlled by the Airbus sidestick. So when set to neutral the yoke is also set to neutral.
And the flaps in Boeing are not 1, 2, 3 and full.
Airbus : the sidestick modifies the trajectory by touches.
Boieng : the yoke applies a trajectory.
I'm sure someone here will be able to tell you whether the Thurstmaster Boeing Edition works on Mac (I bet yes, but who knows...).
Unfortunately on Aerofly FS 4 you can't fly a Boeing like an Airbus when using a joystick, whereas on the iPad you can fly an Airbus like a Boeing (with tilt control).

I only have Windows but there I also use the Sidestick to fly Boeing aircraft. Yes, it's strange if you look at the yoke but with the stick it essentially flies like a normal airplane anyway. So if you ignore looking at the yoke it's perfectly flyable and the joystick has a very high resolution so even fine controls are possible. I have my hat switch assigned to pitch trim, that way it's very nice to fly even without auto-trim. It is easier with auto-throttle off though, just like in the real world. The fly by wire Boeing aircraft (i.e. 777 and 787) fly very well with the sidestick

Oh, and you can change the flap handle so that it doesn't fall into the notches of the Up, 1, 2, 3 and FULL positions for Airbus. You just need to change a few screws on the bottom of the device. Then it can be placed to any position, but you'll need to check the position against the lever in the virtual cockpit or add your own tape markings on the device for the most common aircraft that you fly.
