There are already new engines in Aerofly. Is it for the a320?
Yes, it's for the a320. Looks like the files have been added with the last update of Aerofly FS 4. They are still not usable but probably ready to be activated. Hopefully with the next big update.

I'm not in front of my computer (macOS).
What I would immediately try:
I'd make a copy of the engine_iae. I'd rename the copy as engine_cfm.
And I would copy the folder in ~/Appplication Support/Aerofly FS 4/Aircarfts/a320/engine_cfm
The files stored here take over the original ones in the installation folder (it's non destructive).
And I would try the A320 and listen to the sound.
If Aerofly crashes after that, you just have to delete the added folder engine_cfm
All the manipulations have to be done Aerofly application closed.

The gauges in the cockpit are also the ones from the CFM and not the IAE engines.

So the new engine exists or not? It would be incredible to have two engine options on each plane like in real life, the a320 has CFM56 and the IAE V2500 to have them on Airbus would be a dream

Not yet. But it looks like IPACS intents to add it in the future.

Although they do not work yet, I appreciate that you have added this engine for a future update, these details make your work much better for the community

I didn't notice any difference in sound. Looks like it's still early development.

Whats also interesting is that the option.tmc file of the British Airways livery has "engine_iae" written in it. When using it in the sim, the spinning animation of engine number 1 is weird.
When removing it, everything is normal.
Could someone try to see if it's a general issue? -
